Ajwan or Ajwain / Ajowan is an annual herbaceous plant, (Trachyspermum ammi) 30 -70 cm (1 -2 ft) in height, bearing feathery leaves and red flowers that grows mainly in the Punjab and Gujarat areas of India. Ajwan produces grey-green striped seeds similar in appearance to caraway seeds. Chewed raw the seeds are bitter and known for their mouth numbing effect so for culinary use they are always cooked, providing a hot thyme-like flavour and aroma to a dish. Ajwan seeds are commonly used in lentil or bean dishes, being crushed and fried first to release their distinctive flavour.
