Bay Leaf is the only common herb to come from a tree rather than a plant. Bay is rarely used fresh and doesn’t lose its flavour when dried, making it a useful store cupboard staple. Whole Bay leaf is indispensable in red meat dishes or their sauces. Long cooking times are needed to draw out the flavour so it is often found in recipes that involve stewing, braising or poaching. You can't overdo Bay so experienced cooks will use two or three times the amount specified in older recipes. Bay is used to flavour liquids, such as oil, marinades or in pickling vinegar. Always put some torn leaves into home made gravy and try dropping a leaf or two into homemade soup where it will pull together the flavours. Bay always remains a background flavour so can be safely used with fish and can also be used in milk, such as in a traditional rice pudding. Try adding a leaf to Basmati rice, especially if you are making a rice salad. It was traditional to remove Bay before serving, but now it is just as acceptable to leave this to the diners.
