Curry Leaves (Murraya koenigii) are an essential constituent of authentic Indian curries, especially vegetarian dishes from South India and in Sri Lankan dishes. The trees are native to India and the leaves are highly aromatic, used in a similar way that Bay Leaves might be in European cooking (but dont try and substitute one for the other) except that Curry Leaves area much softer and always remain in the dish. Curry leaves are usually the fist ingredient to be added to cooking, often being fried very briefly in a small amount of oil to release their fragrance. Curry Leaves should not be confused with the European garden Curry Plant which is so named only because it has a curry-like fragrance.
