Dry Dill Leaves (Anethum graveolens) originated in central Asia and has been used for centuries as a herb that both adds flavour and improves digestion. The aromatic fernlike Dill Leaves impart a refined, mild aniseed flavour to fish and shellfish, new potatoes and peas. Long cooking tends to destroy the flavour so it is usually added late in the recipe and it does not combine well with stronger flavours (like garlic or olive oil). Dill herb is most useful when combined with food that itself has a delicate flavour and it is widely used in Scandinavian cooking in the way that we might use Parsley.
