Ground cloves should be used sparingly. In Indian and Chinese cuisine ground cloves are used extensively with fish, poultry and meats, but in Britain they are considered a perfect match for baked apple dishes and other sweet cakes or desserts.
Cloves ground (Syzygium aromaticum) are the dried flower buds of the tree and were named after the Latin word for nail. The buds are harvested once they turn red and they are then dried.
