Ground Galangal powder (Alpina officinarum) is also called Laos Powder(or more anciently Siamese Ginger) and is a close relative of ginger with many of the same properties and uses for savoury cooking. Galangal powder is sometimes described as a cross between Ginger and Lemon Grass in flavour and is popular in Indonesian and South East Asian cuisine, especially in Thai cooking. The powder is convenient to use in curries, stir fries and marinades. In fish recipes it helps to eliminate unwanted fishy smells.
