French dry Lavender (Lavandula stoechas) is the variety grown specifically for culinary use. The familiar flowery smell is a big part of its attraction and the recent fashion for cup cakes has increased interest in lavender for baking. As well as using directly in baking cakes or shortbread, lavender can be added to a sealed jar of sugar and left for a few weeks to create lavender scented sugar. This can then be used for cakes, custards, ice-cream or icing. For savoury dishes Lavender needs to be used very sparingly and is often partnered with other herbs and spices. As few recipes specifically call for lavender it is useful to know that it can usually be successfully substituted for Rosemary, particularly in robust meat dishes.
