Chopped Lemon Grass (Cymbopogon citratus) is thought to have originated in Malysia and is widely used in Asian and Caribbean cooking. But it is the growth in popularity of Thai cuisine has inspired greater use in Britian. Lemon Grass, which is known as Takrai in Thailand has a refreshingly lemony flavour with hints of ginger, but is without the bite or astringency of actual Lemon. These qualities make it especially successful in seafood or chicken recipes. Lemon Grass needs a liquid to bring out the essential oils so it is commonly used in curries, marinades and soups blending well with Garlic, Chilli and Coriander and coconut milk. Dried Lemon Grass can be reconstituted by soaking in hot water. For a finer result blitz in a blender before use. Culinary lemongrass is a different plant species to that used to produce insect repelling citronella oil.
