Mace Powder has a lighter flavour than Nutmeg and is less overpowering which makes it more versatile. Ground Mace is convenient for adding to many sweet and savoury dishes, from meatballs and potatoes to cakes and desserts. Mace powder is a key ingredient in Thai Massaman curry paste. Ground Mace Powder (Mysteria fragrans) is the lacey outer layer (aril) that covers a nutmeg. Ground Mace is removed, flattened out and dried for up to two weeks. During this time its colour changes from crimson to pale yellow or tan.
