Mace Whole 50g
Whole Mace (Mysteria fragrans)is the lacey outer layer (aril) that covers a nutmeg. It is removed, flattened out and dried for up to two weeks. During this time its colour changes from crimson to pale yellow or tan. Whole Mace consists of the resulting brittle flat blades. These don't need grating and can just be crumbled into the ingredients. Mace whole has a lighter flavour than Nutmeg and is less overpowering which makes it more versatile. Mace blades are often used for soups and sauces, as a an ingredient in mulling spices and in Eastern Mediterranean and other world cuisines as a key ingredient in many spice mixes.
