Marjoram (Origanum majorana) is, as the name suggests, a close relative of oregano but it has a more mild and sweet flavour.
Marjoram can be used with the same range of foods as oregano, but is more versatile blending well with lighter foods like poultry and fish as well as complementing stronger tomato and vegetable dishes. It is often the secret ingredient used by producers and is for instance often found in commercial sausage and pork seasonings.
If you think you have roast potatoes off to a fine art try sprinkling them with Marjoram as you baste and they will be even better!
