A Balti is a type of curry, fast cooked over a high heat in a flat-bottomed steel pan with handles in which it is served directly to the table.
For a quick Balti (ideal for using up leftover chicken or meat from a Sunday roast) add the spice mix to frying onions and cook for a further 2 minutes before adding a tin of tomatos and extra tomato puree. Simmer to intensify the flavours and then add shredded pre-cooked meat or poultry and finely cut vegetables of your choice. Cook until the vegetables are done and serve with naan bread.
