Dried mint leaves traditionally accompanies lamb dishes and in Britain this means mint sauce. However Mint leaves (spearmint) can also be used to flavour vegetables with peas and new potatoes being the most well known. Mint also combines well with sweet dishes, especially with chocolate. There are many different varieties of Mint, but the most commonly used for cooking is spearmint (Mentha spicata) whose pleasant, warm, fresh flavour imparts sweetness with a cool aftertaste. The minty aroma is also part of its appeal.
