The Tandoori Masala seasoning is made into a paste with yoghurt and rubbed over the meat. Chicken cut into cubes works well for barbecue skewers. Marinade for about 2 hours before cooking, make lamb tikka, chicken tikka or tandoori chicken. Tandoori Masala contains coriander, cumin, fenugreek, chilli, cinnamon, paprika, pepper, garlic, cloves, nutmeg and bay leaves. The highly coloured result comes from the natural spices, no artificial colouring is used. A traditional tandoori oven is a clay oven shaped like a cylinder which is fuelled by charcoal and bakes food at very high temperatures. Conventionally fuelled tandoors are now increasingly available, or a barbecue (or very hot oven) can be used instead.
