Thyme (Thymus vulgaris) is a common Mediterranean herb used extensively in French and Italian cuisine. It is seen as having an affinity with meat (especially lamb), poultry, tomatoes and eggs and, while flavourful, does not overpower other ingredients. In Creole cooking Thyme is used extensively in blackening recipes where fillets of meat of fish are dipped in butter herbs and spices and then cooked very quickly. In Caribbean cooking Thyme is an essential ingredient in Jerk seasonings.
