Cassia bark is made from a single layer and is much harder than Cinnamon requiring a grinder to make it into powder. Many USA recipes will specify Cassia where UK recipes would generally suggest Cinnamon. Whole Cassia bark is preferred to Cinnamon for some curry recipes and other spicy main course dishes. It is an ingredient in Chinese Five Spice mix and it is an essential ingredient in Chinese cooking where liquid is used as a slow cooking medium and the Cassia has time to impart its flavour.
