Cinnamon Bark, Cinnamon Sticks or Cinnamon Quills are made from the dried inner bark of Cinnamomum verum. The tree is coppiced and the new shoots harvested every year. The outer Cinnamon bark is stripped off to reveal a thin inner bark that curls naturally into a quill as it dries.
Cinnamon Sticks are also useful for steeping in milk for custards and sauces and for preparing a poaching liquid. You don't actually eat the sticks!
These sticks are about 7cm long.
