Whole Aniseed (Pimpinella anisus). These tiny crescent shaped shaped seeds (fruits) have a wide range of uses. Whole Aniseed is native to the eastern Mediterranean, but western recipes for Aniseed centre around cakes, biscuits and confectionary (of which Aniseed Balls are the most famous).
Crush before use to release the distinctive aroma and sweet liquorice taste. Aniseed can also be used in a similar way to Fennel to flavour root vegetables (especially carrots), soups, poultry and fish. Whole Aniseed can also be used as a substitute in any recipe that calls for ground Star Anise.
